About Us

Hey Che is a Chicago hospitality group founded by Chef John Manion and Daniel Boyd, uniting acclaimed concepts El Che, Brasero, and the forthcoming Palomino under a shared philosophy of fire-driven cooking and genuine hospitality.

Each restaurant is rooted in a defining time and place in the chef’s life. El Che bridges the tradition of Argentine asado with the Chicago steakhouse. Brasero looks back to a childhood in Brazil through bright, fire-roasted flavor. Palomino is a return home, celebrating the authentic agricultural legacy of the United States. Together, they tell the story.

At Hey Che, the ritual of gathering around fire becomes an expression of both culinary craft and community, creating spaces where exceptional food and heart-felt hospitality come together.

Chef John Manion

Chef John Manion is a culinary leader whose restaurants reflect a genuine passion for live-fire cooking and South American flavors. His original voice helped to establish him as one of the city's most highly regarded chefs. He was featured on the cover of Chicago Magazine's "best steakhouses" issue in 2026, the same year Chicago's Jean Banchet Awards recognized him as "chef of the year".
