Quentin Bonifassy

Born and raised in Marseille, Quentin Bonifassy came up in a family of disciplined cooks who made clear the kitchen was no place for children. Naturally, that made him want to be in one. He began working in restaurants at 15 and cut his teeth in the kitchens of Bordeaux before setting his sights further afield. Time in Beijing led to studies in hospitality management at the University of Brighton, followed by a decade moving between hotels, Hong Kong, and Michelin-starred kitchens. After completing the Camino de Santiago, Quentin came to the United States to work at Alinea. His hospitality management background and genuine fluency in the financial side of restaurant operations make him as comfortable in a P&L as he is on the line. He has since learned the names of all the Chicago Bears. Assimilation is nearly complete, though he still occasionally calls the field a "pitch."
